Food for Thought @ Forage Market Cooks

Forage Market Cooks is a new enterprise recently sprouted inside the Kruger’s Farm Market stand on SE Hawthorne Blvd., creating a trio of fine businesses alongside Flying Fish Co.
This new project of two cooks—Manda Beckett, a forty-year Portlander, and Diane Corson, who recently joined us from Montana. They met as volunteer cooks and are now “forage-cooking” from Kruger’s Farm Market and Flying Fish. They make savory food, on the spot, from “unassuming” or “misunderstood” vegetables and seafood, for shoppers to enjoy while they are foraging for themselves. The style is fresh and fun, with an emphasis on Mediterranean flavors—fresh herbs, garlic, olive oil and vegetables, sometimes mixed with interesting grains, as well as luscious fish soups foraged locally from Oregon and Washington waters.
